Clarification on Test User Access for Gmail API in Extension Submission

I am working on an extension and i am integrating the Gmail API for reading and processing emails. However, I understand that Google requires app verification for accessing Gmail data, which can take some time.

As part of the testing process, I know that unverified apps can only be accessed by up to 100 test users who are whitelisted with their email addresses. Since I’m unsure of how to share my extension with the judges, could you please clarify if it's possible for me to whitelist the judges' email addresses for testing purposes? If so, could you provide the process for obtaining them, or should I submit the extension with a mock or simulated environment instead?

    If you can share in your 3 minute demo video of how your Extension works with a simulated environment, that'd be fine. There's no need to publish your Extension to the store or publish a complete web application for this hackathon.
